    Maybe some of you would like to share some recipes we can cook here. Tonight my wife cooked Chicken Bicol Express for the first time and it came out pretty good. We found the recipe on the internet and the ingredients at Robinson's market.

    Ingredients:
    1/2 kg. of chicken meat dice cut
    20-30 pcs. of green sili (long green variety of chili peppers) cut diagonally w/o seeds.
    3 pcs of siling labuyo. chopped into small pieces (adjust according to your tolerance)
    1/2 pc of red bell pepper chopped into very small pieces.
    1 tbsp. of finely minced garlic
    1 pc medium sized onion, chopped
    2 inch of ginger, crushed and chopped
    2 cups of thick coconut cream (preferably from fresh grated niyog)
    1 tbsp. of chopped onion leaves
    2 tbsp. of bagoong alamang

    Directions:
    boil the chicken until tender.
    Heat the cooking oil in a saucepan or skillet. When smoking, Add the bell pepper, siling labuyo, garlic, ginger, onion and green sili. Cook stirring for a few minutes. Pour in about half a cup of water. Add bagoong alamang. Cover and simmer for about 5 minutes or until the green sili are very soft. Pour in the coconut cream and add the diced chicken. Cook uncovered, stirring occasionally, until the mixture is as dry as you want it. Serve.

    Given this was the first time we tried this we knew we would have some modifications. For our taste, we want a richer coconut cream flavor so we will cut way down on the water the recipe calls for. Also, we both like spicy food so we will add more chilis. Lastly, the chicken was a little chewy so we will cook it a little longer.

    This was fun for us because in the past I would only eat what I could barbecue to take out leftovers from going out. Proud of my wife. Hope those interested enjoy and can share a recipe. Tomorrow she will try Thai Red Curry Beef, still need to find a couple ingredients to making the home made curry sauce, will try the public market and Lee Plaza.

    Good idea PatO!

    I've discovered something GREAT...this eggplant salad is awesome

    Cut up some red onions and tomatoes

    Cut up hard boiled eggs into pieces (we use salted eggs available here in PI)

    Grill the eggplant a bit till soft

    Mix all together with some vinegar. Salt to taste. Here's what we got

    This is awesome....highly recommend this one

    And now a salad dressing for you to try:

    Extra virgin olive oil (virgin coconut oil if you have it)
    Balsamic vinegar
    lime (calimansi) juice
    Salt and pepper
    Italian seasoning
    lil bit of pure honey

    Mix all together and pour over tomatoes cucumber and onions. Can be used on any garden salad. It's good stuff!

    You like Pork tenderloin Sandwiches?

    OHH so mouthwatering!

    1/2 kilo pork tenderloin cut into small pieces, 1 onion, a dash of granulated garlic, 1 small diced up red bell peopper, about a teaspoon of cayenne pepper all in a fry pan should look about like this after about 20 min of simmering with frequent stirring so the sauce don't burn.

    I found some great bread at a breadshop here and today when I arrived to get it, it was coming out of the oven. Here's what the sandwich looked like ready to eat

    I had nearly 2 kilos of chicken breasts that marinated in a standard marinade pack bought at the store. They sat in the ref for 2 days and then onto the grill they went. Off the grill and ready to be cut up into pieces

    Onions and Bell Peppers sauteed in olive oil and granulated garlic

    Throw it all out on the table complete with tortillas & sour cream and it's a scoff!
