    If you skin and de=bone it and mince the meat, you would then have a very bland tasting fish. Spice it up as you would any crab cake and an Eel this size may make 3 t0 4 thousand crab cakes,
    Fried up just right, should last the entire Fiesta and make for a unique and great taste grabbing for any Filipino or Foreigner.
    Also makes excellent stews and soups.
