I know what you mean and would have correctly assumed the same thing if my wife said that. Lechon on it's own means roast (rotisserie) pig, age is irrelevant. If referring to a different meat then it is added 'lechon manok' for roast chicken etc... I wonder if a Filipino has ever tried killing the pig fast and eating non adrenalin (which is not exactly a premium spice) injected meat??? Maybe they like hearing them squeal because it reminds them of their karaoke singing LOL
I have mentioned to my wife I would rather buy a gun to humanely kill the Pig, one bullet to the brain instead of cutting its throat and letting it die a slow agonizing death, she and family were aghast! NO WAY they all cried, they would NEVER eat a Pig that has been shot! Last night I viewed a video of a Pig being killed on Facebook, the guy took a LARGE Islamic style Sword and in one swoop took the head clean off of the very large Pig! I was amazed at the outcry here over how the Pig was killed, the shock, the horror, the BRUTALITY! I tried to explain that it was the most humane way to kill the Pig compared to the last one here that was hung upside down and had a hole cut in its throat so it could slowly bleed out, squealing in pain, kicking and thrashing around for almost a full hour before it finally died! But nope...
@alex Hmmmm Ok but the OP did ask where to buy Lechon in Dumaguete (Well the best Place.) so to bring us back to Earth can I just say we have bought Many from Gerry's Lechon By the Hypermart; Thanks to Alex and his Rabbit Room Business we have a map of Directions, I understand that they have Expanded and Modernized somewhat so if it is lechon you want go have a look.
Would be great IF the next time someone stopped in they took a picture of their "menu" and prices - IF they have one. Looks like they upgraded enough it is possible. The last couple I bought were from the place... from Hypermart take the left fork to National Highway (not the right fork to Robinson Mall), just before the corner of National Hwy, on the right. (if you miss it and continue straight you would cross National Hwy and end up in FoodNet's parking lot. Fro9m that Foodnet, cross National Hwy, it is 70 meters or so on the left) Park in front and walk around back to talk to them. Most of the pigs they have there are already spoken for but you can discuss what size, price etc you want. They cook them there and will deliver on a wood tray (needs to be returned). My wife did the negotiating so I don't know price details, another place to look though.

Are these places where you can buy a 1/2 kg of lechon baboy or are you all just talking about places that cater a whole pig. In other cities there are many entrepreneurs who will set up a booth, often on a Sunday, and sell lechon by the kg. So you can go there and buy a 1/2 kg for supper for a couple hundred pesos rather than buying a whole pig. Thats what I'm looking for. I've seen a couple stalls selling lechon that way but I would like recommendations from others who have tried it as to best place and time to buy it this way. Anyone?

I have noticed when heading North past Robinson's, you turn right at the intersection to head into the city past the Ceres Bus terminal, just as you turn right at the Robinson's intersection look to your right and there is a small modern looking clean building advertising Lechon. Looks like you can sit outside and eat as well as take-away...
