Biogenic methane cycle lasts about 12 years. It is recycled by plants, which, in return, get eaten by animals and released again. No additional stock of methane and CO2 is being added to the system. Fossil methane is "new" methane (obviously not new, but it has been locked away for thousands/millions of years). This adds methane to the system. Don't blame cows. Our addiction to oil is the problem, not cow burps.
I think the main reason we should get rid of many cows isn't the climate per se, but food insecurity looking forward long term. The amount of energy required to grow 1kg of beef is apparently very inefficient compared to alternative food. Moreover, we might plant trees where them cows used to graze, so indirectly it'll help the climate as well
