Hoping someone could recommend a butcher that knows how to process a pig correctly. Really tired of the wife getting a pig butchered and getting back "hunks" of meat. Will be back in a few days and the wife has a couple pigs that are at a good weight to butcher, but just want to fill the freezer with cuts I can actually identify and put on the smoker. I don't know any real butchers but. If someone can put you in touch with the person that owns D Hermits they might be able to point you in the right direction. I suggest that based on buying their meats and sausages. They are consistently good.
The only information on their label is they are from Dauin. No phone number, nothing. Maybe another member can give you more information.
I believe he supplies sausages etc to Blaire's store on the Valencia road. Perhaps they have contact details.
