I'd imagine they are going to say "lawyers and contracts". You can't own the business name but you can own everything inside the business, the building lease and you can be the sole manager of the business. That way the only thing the local partner owns is the business name.....not much they can do with just a name and if they want to be pricks you just change the name of the business. Of course if you do that you should have a work or permanent resident visa. I've oversimplified all this but you should have somewhere to start when asking people who own a business (at least the one's that aren't married).

Also you may need a work permit if you are planning on being an active manager of your business... May want to check that out. Please don't open a business on a tourist permit as you are not allowed to work!
I know a little Spanish having lived in Colombia for 3 years. The two bartenders at Coco Amigos speak Spanish. Engage them in a conversation they love it.
Also there is guy living here called "Buddy" who speaks Spanish. He likes to have a morning coffee at McDonalds and he loves to speak Spanish when he can. I believe he is member on this board.
