I love peanuts and buy them at various places around town. Unfortunately, the commercial producers here apparently haven't heard of "Salted in the shell" Peanuts. To me, the unsalted ones are just plain bland. Has anyone seen what I'm looking for? Or, can I buy raw ones at the market and do it myself? How would I go about that?

    Thanks all,

    Gary

As an addendum, I want only shelled peanuts, not those things they soak in garlic, or paprika or whatever. Emphasis on Salted in the Shell.

i've been looking for salted in the shell also. i looked online for 'how to do it' but never could find the info so i tried soaking some in-the-shell peanuts in a salt brine and then cooking them. i'm still looking...

My wife gets them occasionally from her Lola in Tayasan. We've tried boiling them in salt water them sort of baking them in the oven. That doesn't work very well either. Maybe someone will have an idea of how to build a roaster, if nothing else comes up. If I could get them to come out like I bought at home, I'd try building one. In the meantime I guess we'll have to keep looking.

I've had those before from a Chinese or Korean store.

    a) Here's something from the Food Network - Roasted Peanuts Recipe : Alton Brown : Food Network

    b) Reference: Cooks.com - Recipe - Salted Peanuts In Shell
    salt
    water
    unshelled peanuts (raw)
Make a 50% solution of salt.
Soak the peanuts in the shell for five hours.
Simmer 3 hours over very low heat in brine.

    c) Reference: The Straight Dope: How they salt peanuts in the shell, and other peanut facts
.. soaking them in brine (a mixture of salt and water), then drying them by roasting, leaving a salt residue behind on the nut in the shell.

    HTH.

Thanks for the info. Sounds like some of the ones I found but not soaking and then simmering. I tried one I found yesterday and will do the roasting with my kids tonight. Thanks again.

maybe that's why my experiment didn't work, i used sea water which is 3 to 4% according to web search. maybe i'll boost the salt and give it another try, i'm also thinking of using a pressure cooker.

50% salt, i wonder if a person could walk on that : )
