The wife and myself had lunch at Zak's place on Saturday. I'm American and the only other time I've had British fish and chips was a number of years ago at a joint base in Afghanistan, so my palate is what it is. I personally found the fish nice and the chips seasoning fantastic. Had a bit of time speaking with the owner, good guy. I wanted to stop by as I believe we should try our best to support other expats and I was honestly curious about the food truck. Will definitely give it another go, not sure about this trip as I'll be heading off to my next project soon. Highly recommend. Shawn

Actually a bit more relaxed than that.. I put down 10:30 opening but I'm usually there long before that, as for closing, it gets very quiet after 7pm and sitting around, empty, just burning fuel is frustrating so we go home by 7.30pm. But if there's people to serve then we stay open till whenever.

Thanks for your reply. Well, I'm going to do my best to get the ingredients together and then, if the suppliers maintain a steady flow I'll certainly do it weekly, or as demanded. I'm not going to entice you with false promises but I'm going to go for it.
Just in manila as of now and a good bit info about haddock or cod. S and r have it frozen in cebu if anyone interested. Haddock aint a bad price for around p1,250 for 10 peices,cod is alot more for big fillets at around 3k.
I would be interested even though, at this time, I'm getting a steady supply of dorado and white marlin. The dorado are especially good, very moist, very flavorsome . I have seen frozen cod in the Dumaguete / Valencia area about two years ago. It looked terrible and definitely to be avoided. However, I fear that this was one of those deluded establishments that switches off all freezers at night thinking they are saving money on power. They're shooting themselves in the foot as the freezer's compressor is working overtime all day long trying to play catch-up. Then, of course, there's the clear and present danger of food poisoning. Killing your clientele is bad for business. But I'm sure S&R have a much better work ethic and I'd like to sample their supply. Unfortunately there's only 24 hours in a day, I wish there were more as traveling to and from Cebu takes time. I would need someone returning to bring me a few kilos . But it would have to be someone with experience of these things, a person who knows what they're looking for and what they're looking at in regard to quality, to be able to recognise freezer burn and be able to spot if they have been defrosted and frozen again. I'll ask about.
