Anyone know of anyplace in Dumaguete you can buy Indian spices like real curry and more so Masala? Thanks
first off said better than I could from the wiki.. Curry powder is a spice mix of widely varying composition based on South Asian cuisine. Curry powder and the contemporary English use of the word "curry" are Western inventions and do not reflect any specific Indian food, though a similar mixture of spices used in north India is called garam masala. Curry powder is actually closer to the Tamil sambar powderand the word "curry" is derived from the Tamil word kari meaning "sauce, relish for rice", or from the Kannada word karil or from the Telugu word kuura Some of the spices are easily found like garlic others impossible here is a short list so you can start your own curry cabinet. But remember most commoners in India dont know the proper mixes for dishes..there being thousands of curry recipies. but broken down to things like fish curry..lamb..shrimp..goat..goat head..pig...on and on..they go to the market and tell a specialist how many they are feeding and the principle ingredient and they make the curry mix for the buyer. Find a list of indian receipes online you will notice changes in the sauce or in this case..the *curry* Our closest neighbors were great people from India in the USA..My pinay wife commented one day coming home how great the neighborhood smelled and we then started to get dishes dropped at our door many times a week. My filipina wife learned how to make some pretty decent dishes and how to make chapatee the flat bread. Here is a short list you can start collecting spices and herbs Most curry powder recipes include coriander, turmeric, cumin, fenugreek, and chili peppers in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, asafoetida, fennel seed, caraway, cinnamon, clove, mustard seed, green cardamom, black cardamom, nutmeg, long pepper, and black pepper may also be included.
