I used to work for a ngo in Dumaguete about 25 years ago, when I was thin and still had hair. I always enjoyed a good dish of kinilaw. I'm considering a sentimental journey back for later in the year and am wondering who has the best kinilaw now? I'm amazed at the variety of cuisines now in Dumaguete.

There are so many different ways to prepare kinilaw: spicy, not spicy, lots of vinegar, lots of "mayo", sugar or not, lettuce/cabbage. I prefer the spicy with lots of vinegar prepared on lettuce. There's a new"er" bar out by Hayahay (past Barefoot) that serves a pretty good kinilaw to my liking.

Bambulo resto serves a nice kinilaw and good portions also, served with home made bread

True, and I won't order it if they can't accurately explain what's in it.

IMHO, together with other guys I have spoken with, Bambulo food is crap, sorry, but that is the reality.:( The only good things about Bambulo is the very nice helpful and happy staff, and the cold beer, together with the very nice ambience and surroundings, and pool. BUT, do not go there to eat if you are looking for good food, and variety.

Best practice is just to make your own. You can make enough to last you a month for 500 pesos or less.

Good god Steve Watson, I don't know what's wrong with your tastebuds, but I find the food served at Bambulo pretty good. me and my wife have eaten there quite regularly over the last couple of months and we (I) only had one complaint during that period. Mind you, I live nearby, they know us (and we know the cook), and we are generally pleasant people: maybe that's the reason why the food id not to your or your 'other guys' liking. I have sat there more times than I care to remember and was ashamed by the way some guests seemed to think they should behave (Yes, I'm talking about 'long-noses'......

I have not ate there because everyone, minus yourself, has said the food there is pure sh*t. They say the ambience is nice though. I guess I should get out there and get my own opinion on it.
