    hi Kevin

    i might be reading in too much into to the korean chef.

    all 3 korean restaurant in town closed recently. they were doing ok but cannibalized each other and had big/biggish cost bases.
    the path is open especially with the new university term approaching and a reported big jump in korean students registered, 1000 to 1500.

    so there are korean trained chefs trained it these restaurants available but i have no contacts

    so best of luck

    the so called chefs in one of the places one was from China and the other was an older filipina woman who was shown how to cook each dish a few times by a korean whom could not cook in the first place.Hence the closure of the restaraunt. another one was catering to students and did not fare well to to high of a rent. Thank god now room for another much needed Scooby's LOL. The other one's were merely ramen houses that had korean style snacks which most people not familar with korea would not probably even try

    What, no Bulgogi or kimchi? Thats OK, let them eat pancit and balut, it would do them good.

    Hm, i wish someone would open a Japanese restaurant. I know there is one at Boulevard but it doesn't cater those delicious snacks like Ramen and such.

    hmmm ok thanks heaps for advice, I wonder if the korean restaurants catered to their other needs like internet, tutoring, Games, karioki or films? i figure thats how you market to a nich right? let me know if they did cater like that because if they did i will have to change my strategy! Japanese food is great, but how many people will come through the door you think? and ummm can I find a Japanese chef here, better to maybe advertise in Japan for a partner to get a really qualified Japanese Chef ? i was thinking of diverse menu with a little food for every ones tastes ! do you think that is not niche enough, should I go full blown after one nationality or keep to the plan ? hmmm thanks again

    Hi Kevin....for what it's worth...we did this in Saudi Arabia years ago...we had a small takeaway business that did Thai food (my Filipina wife was trained by a Thai master and cooks as well, or in my opinion better, than most Thai chefs - I eat better than anyone I know - by far)....anyway it went ok - but when we expanded to Japanese, Chinese, and Filipino - which she was good at all of them too - the business went supernova.....Eventually we had to shut it down because my wife had a defect according to Saudi law...she was a woman. And women are not allowed to work in that area...yadda...yadda...yadda....But it was great for a while....Doesn't hurt to widen horizons if you can....

    japanese chef wow you think that a educated nipponchef would work in dumaguete
    of course if you spend 4up to6000 dollars a month then it works

    Aswaw ko makes excellent sushi, vietnamese spring rolls and learned to cook in Singapore. Now she can make stuffed cabbage, jumbalya and gumbo. But she would rather open her own restaurant, but the talent is around, keep looking. You may have some competition but most will agree Duma needs restaurants that provide good food and better service than can be gotten presently.

    Closest thing I've seen for a Japanese restaurant is the sushi bar at Casablanca. I doubt you can get ramen though. too nice of a place for instant noodles (my personal opinion)
