Smoke House ??

    Last night I did yellow fin tuna.. Thick cut,light marinade of wasabe ,mixed with soy and calamansi .. Mix of peppercorn and little cayenne on all sides. Cook 1-1/2 min per side...The best I have had here in the Philippines..
    Is there a commercial 'smoker house' that will custom smoke fish chicken, turkey,meats,sausages....?? I would think that this would be a viable business in this area..
    Years ago there was a Canadian guy(Michael) in Zamboanquita who was starting a "smokehouse" and I tried some of his products... He has since left for some other venture.. Miguel
