Kevin the aussie butcher is still recovering in Australia at the moment and won't be returning to Dgte until the end of 2021............my question is does anybody know of a butcher in Dgte that is preparing smoke leg hams for sale over the Xmas period???
I doubt it. Guess the only guy I have heard of lives in Bais. Goes to Whynot sometimes. Name of Barry English I think. He could do it but I am not sure if he has the facility. Maybe he would know if anyone else can.
I know a Danish Guy, Soren Bo Arp. is his name, he smokes Bacon and does Hams also, his Bacon is the best available here and not the most expensive, (I also smoke my own Bacon but cannot even come close to his product) I believe both the Ham and the Bacon sells at around P750 per KG, he is just starting out here at the moment and struggling a bit to keep up with the orders but should be in full swing in a very short period of time? he just happens to be my Neighbour so I will ask him about Smoked Ham Legs and if he is willing to do this? Now I am somewhat concerned for my Neighbour, I can see all the Smoked Bacon Producers ganging up on him and perhaps putting out a contract to dispose of him? to anyone considering this he is the first house on our private drive and not the second one where I live. Now I have posted here before about a DIY method of cold Smoking Bacon/Fish just about anything, it is just so easy you would not believe it? buy a Cold Smoke Generator from the likes of Shoppee, P450 is all they cost, you can do this in a cardboard box to start off with, any kind of sawdust can be used even coconut wood, it will never compare with Soren's product but better than anything you buy in the Supermarket.
