I doubt anyone here has heard of anyone being deported for such activities. The only people that get deported for these things are those that get active in politics...and it isn't hard to make that jump (Charity+Human Rights=Politics). You will almost certainly get away with it. If you are really that worried about it (and about doing the right thing) I would suggest you get the proper visa. If you can't afford, or don't have the motivation, to leave and get the proper visa then you are just going to have to risk it. I could not find a single instance online of a tourist getting busted for working with charities...but that doesn't mean you can't be the first they want to make an example out of if you unintentionally step on the wrong toes, which isn't hard to do in the Philippines.
Nobody here should suggest you do anything illegal (such as working on a tourist visa). Can you get away with it? Most likely, but that doesn't make it right. It is on you to evaluate the risk vs reward and if you want to do the right thing or not.

I am not interested in seeing pictures, but I would like to know the circumstances surrounding his death....was it natural causes, or was he murdered? If he was murdered do they have suspects in custody or are they at large? These are the important things we need to know, the information the news sources should actually include, rather than graphic images.

I don't think anyone complaining about the service here (specifically waitresses) are expecting to be seated, chair pulled out, napkin placed on their lap, and suggestion of entree with wine choice at a bottom of the pay scale eatery.
I also don't think it is too much to ask of those staff to know what menu items are supposed to look like and make eye contact with customers once every 5 minutes so they can motion for assistance if they want/need any and go ask what they need instead of treating their place of employment as their bedroom and customers as unwelcomed inconveniences to their FB updates.
Owners/managers are responsible for staff compliance, lazy staff who ignore customers can only act that way if unsupervised or management doesn't give a hoot either.-

Yeah, there is no incentive to follow laws without enforcement. It's not an education issue. People will do whatever they can get away with.
