The wife and myself had lunch at Zak's place on Saturday. I'm American and the only other time I've had British fish and chips was a number of years ago at a joint base in Afghanistan, so my palate is what it is.
I personally found the fish nice and the chips seasoning fantastic. Had a bit of time speaking with the owner, good guy. I wanted to stop by as I believe we should try our best to support other expats and I was honestly curious about the food truck. Will definitely give it another go, not sure about this trip as I'll be heading off to my next project soon.
Highly recommend.

My wife arrived shortly after you left and is to be forgiven. She is not tardy, she is suffering from violent bouts of morning sickness.
Oh yes, the rubble which is our car park and constantly up and down the steps to the truck for me is a nightmare. I'm only awake now because of the pains and cramps in my feet and legs. However, hopefully all is not lost. Myself, a good friend and his associate have mapped out a plan to , more or less, solve this problem. We're moving the truck to the very rear of the car wash, away from the ever present traffic noise, then employ some type of grass. The rear of the truck will be converted into a service bar leading to the next area which will be dominated by heavy duty bamboo walls and a combination of wood and bamboo flooring , all being well we'll be on stilts to keep our tortured feet dry. Superior furniture for customer comfort is already stacked at our house.This will be topped with a nipa roof to combat the sun and rain. Of course, finance will rear it's ugly head so this will not be happening overnight.
The shabby sign up front is to be replaced by another one, more vivid and possibly illuminated , I'll look into that forthwith.

Beef Rendang.
Usually cooked in advance for visiting dignitaries
A rich and creamy Malaysian/Indonesian beef stew made with beef, spices and coconut milk.

INGREDIENTS
Ingredients:
- 1 1/2 lbs. boneless beef short ribs, cut into cubes
- 5 tablespoons cooking oil
- 1 stick cinnamon, about 2-inch length
- 3 cloves
- 3 star anise
- 3 cardamom pods
- 1 lemongrass, cut into 4-inch length and pounded
- 1 cup thick coconut milk, coconut cream
- 1 cup water
- 2 teaspoons tamarind pulp, soaked in some warm water for the juice and discard the seeds
- 6 kaffir lime leaves, very finely sliced
- 6 tablespoons kerisik, toasted coconut
- 1 tablespoon sugar or palm sugar to taste
- salt to taste
- 5 shallots
- 1 inch galangal
- 3 lemongrass (white part only)
- 5 cloves garlic
- 1 inch ginger
- 10-12 dried chilies, soaked in warm water and seeded

Chop the spice paste ingredients and then blend it in a food processor until fine.

Heat the oil in a stew pot, add the spice paste, cinnamon, cloves, star anise, and cardamom and stir-fry until aromatic. Add the beef and the pounded lemongrass and stir for 1 minute. Add the coconut milk, tamarind juice, water, and simmer on medium heat, stirring frequently until the meat is almost cooked. Add the kaffir lime leaves, kerisik (toasted coconut), sugar or palm sugar, stirring to blend well with the meat.

Lower the heat to low, cover the lid, and simmer for 1 to 1 1/2 hours or until the meat is really tender and the gravy has dried up. Add more salt and sugar to taste. Serve immediately with steamed rice and save some for overnight.
To prepare the kerisik or toasted coconut, just add the grated coconut to a dry wok and stir continuously until they turn golden brown.

I find this is easily fixed by ordering drinks and the appetizer and then, when they arrive, ordering the main course. Adapt and overcome the problem. Otherwise, you are allowing their failure to be your problem.- Agree x 6

I'm an expat of many years, almost 18 years and have always found YNot to be the place to go if you want good food and a nice surrounding. The staff, although not up to international standards, have always been more than polite and very helpful. I think some expats expect too much and as time has gone on I have witnessed absolutely atrocious behavour of some who deserve to be thrown out on the street. As for "ownership" Marcos from Switzerland is one of the nicest people you can wish to meet. And he is far from new to Dumaguete as I am sure the older members of us can confirm. So as far as I am concerned, you guys who see fit to criticize can go to hell and get the hell out of Dumaguete. We don't need you here.

Ludwig's Valencia just expanded. They now have pleasant indoor and patio dining areas and a decent sized menu. Unfortunately (for me), no air conditioning. The new entrance (glass wall and doors) is next to the little stand where they were located and a bit back from the sidewalk. If you cruise past looking for the "old Ludwig's," you may think it is closed up. It's not. They serve breakfast, but don't open until late (9 or 10) on every day but Sunday....when they open at 6:30. They need a baker and assistant cook right now, and told me when they fill the positions they will open at 6:30 everyday for breakfast! What a concept: A restaurant that serves breakfast starting at breakfast time!

We go there every couple of weeks for lunch and find the food, staff and Orville great, and a nice peacefull enviroment in the resturant and also get some extra corn bread to take out to have with our dinner

Sorry that I have not read well all threads here but.....
We have eaten here about 10 times and NEVER had any feeling the owner was hinting at donations. Absolutely nothing, he chatted about his work, I even offered some books from a charity I work with. He was most grateful.

It's our choice to live in 3. world country, and sometimes we meet a reality, we are not used to. I have phone numbers in my wallet and of course in my phone. It's scary to think what will happen to you, if you end up unconscious in an accident, hope you are lucky and meet right people. I know and seen foreigner run away from accident where people are injured, try it my self. I understand why they run, I'm no saint, but will always stop and do what I can,to help a person who can't take care of them self. I will follow to hospital, I don't say I sign to pay hospital bill, but will try find out if there are a family or friends around, who can take care. Hospital can't force you to sign or pay. I can live with my self after, I know I did my best
