I'll be searching for fresh dorado this morning, exhausted my supply yesterday. At the same time yesterday I baked bread all day, white and whole wheat rolls and loaves of any given size. So I need flour and yeast , too. Several of my customers have shown interest in my bread and I'm only too happy to help out when possible. As soon as i acquire the necessary ingredients I'll continue baking this morning.
Today I'll also have pork fillets, I'll be sauteing with fresh apple slices, a squeeze of lime juice , white wine and a creamy mushroom sauce. But please, don't hesitate to ask if you want them cooked any other way and the same applies to all my dishes. If you want fish poached... no problem. If you want it baked in the oven , also no problem unless the oven is already full of baking bread. However, I think it's possible I could install another oven..... mmmmm... I've already got two fryers on the go which is all well and good if I'm working alone but if not, then I have to think of the safety of my crew. So we'll see.
Finally, come about 18:00 I'm getting a tad tired, drenched in sweat ( I do always carry a change of clothes) and not just a little grumpy. Especially if I'm having to go up and down those stairs time after time. Just ignore me and any expletives you're not really meant to hear.

The US is on the path to national legalization, I think it will happen during Biden's administration. But, my answer to your question would be, wow, you really need to do a bit of studying about the realities of the country where you are living.

 

Had lunch at Casablanca today and asked Christine, the day time front of house manager and she says not that she has been told or is aware and is not aware of any rumour like this. I also asked one of the waitresses to ask the chef (who I have met and pretty sure is German) and the answer was no. Food was excellent as always and service was likewise. I know the owner has been in Austria for a long time but from my perspective, the staff, who all seem to have been there for a long time, maintain the high standards that you expect from this restaurant.

 

Well Jack... I am building a new "Sit Your Bum Down Resto"' on the beach, Km 10.9 in Bacong. Will open in April. 80 seats covered or open air. With the same concept as my pizza place 2 years ago. Found out today Sans Rival at the mall will be moving to the empty Dong Juan site in June.

 

I consider Y-not an okay restaurant, food over the middle quality for the Philippines, at least for the dishes I like. I find the service good there, never had any reason to complain. I notice over the last year or so, more customers what you call low -class expats are increasing in number, same in Dumaguete in general IMHO. I'm not high society, but feel better when people have a nice behavior, by that I mean show respect to surroundings, staff and other customers, not all know how to behave in public space. That said, I still thought it's the few who have bad style
