Casablanca Restaurant carries some cheeses. Don't know if they have what you want.

if not, they have a "wishlist", if your item is available they can order it for the next delivery

    Found it..

Went online and found a recipe for making your own ricotta.

    2 qts whole milk
    1/2 cup cream
    1/2 tsp salt
    3 tsp lemon juice

bring milk, cream and salt to a rolling boil, lower to a simmer and add lemon juice, stir for two minutes and then strain... problem is low yield...

    solution:

better to use 2 liter of whole milk, 1 liter of cream, salt, lemon juice or vinegar, same procedure but yield is 10 times and same taste... not even sure the milk is needed but haven't tried water... seems the key is the amount of cream... lasagna tonight baby...

Making cheese in the Philippines is not as easy as it looks on paper, because you will not find the right milk here.

    Dito !!
I have made Paneer cheese in Thailand and it was great !!
I don't understand why the milk is so tastless here, as the climate is the same in fact its more green here, so the milk should be better ?
I will compare your recipe to the one i have.
    Cheers Di

    Ricotta cheese

I make my own....so simple and always tastes good!! I just use a milk/salt/vinegar recipe...works beautifully for my needs! Anyway, the Negros Dairy has it, if you are lucky you can get it when you need it...I haven't tried it, so not sure of the taste. Good luck!!
