    If you want good meat from a goat or an antelope, you don't slash it's throat and let to bleed to death, this puts adrenaline in the blood. And you don't shoot it with an arrow, because even a well placed heart shot is not instant death, and this puts adrenaline in the blood. Adrenaline is what makes meat taste gamey, or more gamey than it has to. A well placed head shot while the goat is calm is the ticket. THEN, you must get the meat cool and clean immediately. One hair will destroy a square foot of meat, an inch or two deep. You then hang it for ten days at approximately 38 deg Fahrenheit. The farther the deviation form this, the poorer the outcome of the meat. Yes, different breeds of animals can taste differently too, but I have yet to see anyone properly process an animal here. Deer, elk, etc. are much more forgiving in terms of processing errors than is a goat or antelope.

    I hunted from an early age, (about 6 or 7) and was a hunting guide for 10 years in Wyoming. We processed hundreds of Antelope (speed goats). I was raised on deer, elk, buffalo, moose, bear, and a variety of smaller game. Over the years I have processed them all.

    Show me a bad piece of meat and how it was processed, and I can show you where the processing went wrong.

    Well, I can appreciate your big game hunting background Larry. I used to go small game, and deer hunting a lot when I was a young boy also. But as I got older, it just wasn't my thing.

    But from a consumers view, I enjoyed eating the deer taken from dad's uncle's farm, where he'd leave a patch of corn go for the deer to eat. They sure tasted better than deer that only grazed grass.


    I also prefer black angus, to carabao, weather it's the way it's processed or not:D

    Captain Cook brought Spanish meat goats to Hawaii back in the 1700's. And they taste far superior than what I've tried here in the Philippines.

    1700s you must be older than you look !!:D

    And in Texas, cabrito is served in almost every Mexican restaurant. Generally it is young goat, and very slowly cooked. Served in many ways from cabrito stew to cabrito tacos and everything in between. I've found that straight shots of Tequilla makes it taste much better. But you have to know the "proper way" to drink the shots.
