The first shot here is the “visual menu” where you can show which meat item you want and how many. I have found it easier to simply go up to the stand as opposed to waiter/waitress service for the food but rely heavily on the wait staff to keep the San Migs coming.

I recommend the baboy (pork) and manok (chicken) myself. You can also get the tripe and other “organ” meat but I have never personally developed a taste for it myself. You will want to get some calamansi and chili peppers which are then squeezed into soy sauce and of course make sure and get plenty of the puso (heart shaped rice packets). If you are really feeling adventurous then order the balut.

There are two main rushes, a little rush during dinner and the late rush which lasts till early the next morning. The little rush is not very crowded and it is easy to find a table. You want to take stock of which way the wind is blowing as the smoke from all the grills can get quite thick. Once late evening rolls around the place can get packed with students and the younger crowd to enjoy the food but also the live music. It can be harder to find a table at this point.

The second image shows the lull between rushes. It is a fun time and the whole thing lasts for more than a week. (Not sure the exact days I still get confused with the whole festival schedule)

Wow these pictures are amazing beyond words for me. I miss this and all other festivals in Dumaguete. Man, I really wish I could fly home right this second! I'm so glad and thankful that you posted these pictures. You really captured the delicious side of the festival. All of us Filipinos abroad ALWAYS talk about our national foods and how it is so d*mn hard to get them or make them abroad. (Either no time or not enough ingredients, or the imported goods are too pricey.) Thank you so much for these pics!

Thanks Cayimi, I am glad you liked them.

I too miss the festival and can't wait to get back. I missed this years but hopefully will be there for 2007 Sandurot.

I forgot to mention the BBQ Saging, best in the Philippines can be found in Dumaguete.

Wish I can be there for the festival too, Richard, but it's not likely. I just took a peep at your website. You're an amazing photographer!

I like occasional spicy hot cuisines (not too hot) . Eating raw chillies not the powdered processed ones are bttr according to findings ,they said they have good anti-cancer properties . I wish to make it in my routine food content 1 x day … eating chillies (dear o dear just being too ambitious, nevermind the sore bottom lols:D  ) but who knows in a year munching chillies is as easy peasy like gobbling crisps…Doritos or Pringles hehehe!

wow, missed those local food too, have to try the dumaguete tempura ,and this pizza ur all talking about in another thread here, u know what i mean.

I missed the dumaguete tocino , local baye-baye sa tsanggi ,puto, budbud ,jos inato bit of chin loong etc...only dreaming today.

are you based in dubai now? i just love the country, it's like phils, outside philippine islands. we had 10 days hols 2 years ago and we did almost what dubai has to offer; dine cruise in the creek, rode water taxi, haggling in the gold souk, sand dune bashing entertained by belly dancers, etc etc. but the best thing we did, we managed to dine in one of the restaurants in burj al arab and it was so amazing..... it's pricey but its worth it.... recommend it to everybody.

Heh heh, too many chilies can be tough in the morning, especially when combined with many San Migs.

I miss the inihaw na pusit, kinilaw, pancit, and of course my wife's mother's adobo :D
