    Some basic curries can be prepared ahead and used as and when you need a dish in a hurry. One of the very common dishes is the tomato curry.
    Ingredients :
    5 tomatoes, chopped large 1onion, diced small 1 tablespoon ghee ½ teaspoon ginger paste 5 cloves garlic,pounded 1 teaspoon chillie powder ½ teaspoon coriander powder ¼ teaspoon turmeric powder salt to taste
    Method: Fry the onions in hot ghee until they start to brown. Add the ginger and garlic and stir, then add the powdered spices. Blend well. Throw in the tomatoes and salt to taste. Turn the flame down to medium and cover for 10 minutes.This will form a spicy gravy to which you can add any mixture of vegetables or chicken. If using cooked vegetables, keep the pot on the flame until they are uniformly heated; for uncooked vegetables, cook as long as necessary. For raw chicken be sure to cook for at least 20 minutes. Serves 4.
    Notes : You can add vegetables, or meat ,lamb or chicken or fish of any variety to this Indian Food Recipes and it forms a very good curry. Cook once more in the gravy, whatever you add ,if it is already and let it simmer for for a few minutes so that they are infused with the flavour of the spices in the curry.Cloves and cinnamon can be added for a different flavour.Marination of meat before adding may give a good twist to the curry.

    This is good, i can also find recipes in this forum...anybody who knows how to make chorizo and embutido? Yummmmmy!

    I thought Curry indicated the use of Curry powder.

    Curry is yellowish color whereus tomato is red.So its a red curry?

    Can it possibly be a curry dish without a curry mixture in it?
    I have a work colleage whos mauritian of indian origin,when she makes curry dish it always has some curry mixture in it.Regardless,this seem to be a nice recipe,reminds me of that one in while in island of Crete, 'twas of a very tender lamb's meat in thick tomato gravy sauce (loads of tomatoes in it ),wild mushrooms,onions,sweet pepper ,some herbs, very delicious.Btw ,thanks domdat.

    I think it's the garam masala (blend of spices) that makes it a curry but feel free to correct me on that :D
