As an italian and a lover of the stuff, I'm astonished by the fact that in the Phils, with the huge numbers of water buffaloes roaming around, none has ever considered producing mozzarella cheese.....

Several years ago I thought the same thing, until I tried to find someone to supply milk!

Trust me, don't mention it, the locals will talk.

Yeah, i see your point, i would not fancy getting kicked or gored by one of these cuties...:D....
My wife started smiling when i presented her with the big idea, mind you, it had to be asked though.
In Italy they use automatic machines to do it, they will clean and disinfect the nipples before milking....apparently you get 1kg of mozzarella for every 4.5 litres of milk.....never mind then, I'll have to stick to the cheap imported crap from Australia (no disrespect here as I'm sure they produce fine cheeses for their home market).
    Ciao, Marco.

here is a guy doing it in the States...I better not let my father in law read this...lol though I would think the carabau of the PI would be more domesticated...

    here is a paste..

"Most Wisconsin dairy farmers don't pray while milking their cows to be spared personal injury, or even death.

But most farmers also don't milk water buffalo - muscular Asian bovines with sharp, curved horns and mighty hoofs.

"Every morning, I'm singing to them, praying to God it will go OK," said water buffalo farmer Dubi Ayalon. "It's me, the buffalo and God. They trust me and no one else."

The slightly built farmer has the bruises to prove how fragile that trust can be.

But he says the payoff is worth the risk because it's a unique niche in America's Dairyland.

Water buffalo milk brings five times the price of cow's milk at the nearby Cedar Grove Cheese Co. (my.execpc.com/~cgcheese/), which turns the high-butterfat milk into fresh mozzarella di bufala - a supple, intensely creamy cheese with a short shelf-life that chefs prize for topping pizzas.

Cedar Grove is the only Wisconsin company making mozzarella from water buffalo milk. And Ayalon is Cedar Grove's only water buffalo milk supplier. "
