    Went with a marinade last night pretty much on the fly for some pork chops; soy sauce, oyster sauce, spicy vinegar as well as some chopped garlic and onion. I only had time to let things marinade for a couple of hours and was honestly worried that I may have used too much vinegar because the smell can be overwhelming but the pork chops came out fantastic, not sour at all and very tender. I need to try this marinade for some wings later, but loading up on some chili peppers as I love wings with a kick.

    I plan to roast a whole chicken on the grill tonight (previous times have turned out well) with some potato and carrots. Very simple as well, salt and black pepper outside and inside with some chopped onion and garlic inside, potatoes and carrots outside with some salt and pepper and just let it cook in a pan on the pizza tray for the grill.

    I broke out the Betty Crocker cookbook I bought the wife a few years ago to come up with something a bit different. I did some scalloped potatoes with ham, which I love but had never actually made before. I rarely follow a recipe so I added some cheese, garlic, paprika and cooked the onion and garlic in bacon grease. Cooked on the grill and turned out great.

    I also went with some stuffed pork chops. The chops at Prince are a bit thin so it was a challenge to slice them but the wife handled that well. In Tanjay you will not find stuffing so I toasted some wheat bread, sage (which they have), bacon, onion, garlic and paprika. For the exterior of the pork chops it was just some sea salt and coarse black pepper. Turned out very well and the stuffing was probably better than what I've stuffed into the birds for Thanksgiving; and I brag about my stuffing.

    When I woke up yesterday morning I had a craving for some pork tenderloin (even had some thoughts on a good dry rub)...after explaining to the wife what cut it was she knew where to go. That shop was closed (on a Monday) so we went to another place in the market. The closest they had was some meat from the rump, since it was not exactly what I was looking for I went with a Cajun marinade I had picked up before. It turned out OK, not as tender and juicy as I would want. A vegetable stir fry and rice made for a pretty decent dinner.

    I have been using "Hickory" made by Clara Ole which I really like for a marinade sauce on chicken and pork. I can get it at Robinson's in the mall. Is that the one you are specking of?

    Dave...the Hickory marinade is not always available but will check Robinson's next time I go. Prince is here in Tanjay, can be hit or miss on what they have in stock but can't complain as it has brought a much better selection than we had before.

    I've seen the grilled bananas here and asked the wife awhile back on how they were prepared out of curiosity, grilled and then coated in white sugar. They popped into my mind the other day as I found cinnamon at Prince. As we were doing a soup today I decided I wanted to try out grilling some bananas. I went with putting the bananas on skewers and coated them in a mix of brown sugar and cinnamon, my first time putting a banana on the grill but they turned out pretty good. The wife thought I was off by coating them before cooking but figured they sugar would caramelize and make for a nice looking banana.

    I did 15 bananas, I ate one as the wife knows I'm not into sweets but wanted me to try them first. The wife and kids ate 10 more after dinner so the kids have 2 each as a snack with their lunch. I was a bit surprised that the wife and kids have never had cinnamon on anything before...such a common ingredient when I was growing up. Then again I have eaten things here or there that I never had growing up.

    There are 2 local veggies (greens) that I am starting to really enjoy, one is the leaves of the sweet potato (wife says they are called "galay") and the next is kalamungay/malunggay; the wife was making a pretty good soup using them with fish. I'm not a huge fish fan, especially how they cook them here...I'm a minute away from a fish bone in the throat. We talked about changing up her recipe using chicken instead, more garlic and onions as well as some chili peppers and potatoes. It turned out fantastic and think using pork next time will be equally well.

    I'm a big fan of spinach and other greens so these two really work well with my tastes plus there is no bitterness with them. I want to try using some daikon radish (another favorite of mine) either alone or with the potatoes one of these days.

    I realize I tend to post a bit on this thread but love to cook and trying to use local ingredients to make things work to my tastes is quite fun.

    Did stuffed cabbage tonight, went with ground pork as I prefer the local pork over beef. I did not use rice as we are going to be eating rice on the side anyway; garlic, onion. chick peas and a bag of frozen mixed veggies (caught sh*t for wasting the money on mixed vegetables though). The wife and kids really enjoyed it, I do try to mix things up a bit with my tastes and theirs.
