First, let me welcome you to Dumaguguete in advance of your arrival. I hope you enjoy your visit here and create amazing memories. As for food.......I hope that you bring 2 cups of patience....1 cup of understanding....2t of amazement and 1 sprinkle of humor. The subject of food and food perveyors has been beaten to death on the forum so i will only add that.... few places will meet with your expectations. Even tho there is a lack of products, training and facilities most establishments strive to provide a good meal for a fair price. I think a blanket statement would be that certain establishments do certain entrees better then others. Finding those places is the challenge. None will do everything correctly.
Being Highly Critical of presentation, quality and quantity will leave you disappointed. Enjoy your vacation and the Philippines.

Food and restaurants have improved greatly over the years in Dumaguete. Most establishments here are either fast food or local fare. The main problem here appears to be the lack of quality ingredients. Also, the employment regime here does not encourage people to do more than they have to. There are some decent restaurants here which are good value for money, but If you are looking for a restaurant that is first class, you will be out of luck, as there isn't the demand to pay high prices for quality.

Everyone here has given great advice, I have nothing to really add to it other than "5 star dining experiences" will be found nowhere in Dumaguete, but you will find some good/quality food with a great atmosphere.- Agree x 3

Welcome to DI, I agreed with RR best answer.
In early 90's i was a part of Chef William 'Billy" King team in manila,I was also part of team servicing the Chain des Rostisseurs abroad as restaurant manager.
In dumaguete city there’s none of the establishment that would satisfied Michelin stars. You may try to dine at Atmosphere resorts and Salaya beach houses, my personal choice is Salaya.

I wanted to add. We are an enclosed Aircon Sports Bar. I think this helps provide a more sanitary enviroment. Sitting along the roadside watching the dust swirl around and settle on my plate is not my idea of the most appetising meal. While I have been know to try local roadside cuisine for the experience. It was just that, an experience. While we can not be sure where each of our customers have been previously to their arrival here. We can and do, work hard at keeping everything clean. This includes boiling utensils weekly. Using a bleach solution when cleaning the furniture. Daily inspection of refrigerated products.

Note: It might have been a very intelligent young lady because I later ended up funding their entire night out. I now think there was a bet with her friends that went something like this:
Girl to friends: "I bet you I buy all of our drinks for the night with only 50 pesos."- Funny x 2
