When ordering, if you ask for fish to be grilled or poached this is not a problem, also pork can be grilled , too. I buy lean cuts of beef for ground beef and make the burgers myself. Personally I'd prefer cuts with a little fat in them as that's where a lot of the flavour and juiciness is. I try to avoid other cuts of beef because of the lack of quality. ( please don't send in dozens of recipes, I've been down this road too many times already).
But please bear in mind that we're only a food truck with extremely limited storage and refrigeration.

Plans are in place to move the truck to the far rear of the car wash and it will be covered, thereby protected against sun and rain. Even though we do have a permit for the Sunday market , where we , like Paco's Tacos, would be swamped by ukay ukay we're staying where we are.
Moving the truck, is not as easy as it looks, it's a nightmare and Dumaguete, even if permits were granted, is not on the cards.
There's been a lot of interest sparked by Dumaguete Info , many people are coming from far and wide so we're getting well known. I don't want to spoil that.
Yes, we are quiet at the moment but it's the end of the month of January and it's to be expected. Hang on in there folks and see how the new structuring goes, it's all about customer comfort and I have excellent artisans on the job.

I want to share my thoughts with you, some years ago I had the same idea as you with a food truck, my plan was it should be fish products like fish burger, fish cakes, steak of boneless fish and some smoked fish products. My point is maybe you are in the wrong spot if it is possible to move to a place on the pier or close to you would have a flow of people who pass by to and from the ferries. Of course so close to ferries as possible and so far from boulevard noise as possible. You would also be a great supplement on the Sunday market in Valencia if you could get a space there, just my thoughts no warranty that is it the right thing to do

I think Sundays, from now on are going to be a day of rest.
Clearly the Valencia market is attracting all the trade , Zak's Place is doing next to nothing.
So, we'll be closing on Sundays, for the time being anyway. It's just not worth the gas and electricity.
In the not too distant future we expect things to change , I'll keep you posted.- Like x 2
