    There you go.....not such a darn idea then.
    All one needs is inventivness, lots of money and good connections....
    I'll be awaiting for fresh mozzarella to flood the filipino market then...without holding my breath though :D

    well Jack give me a year and I will see what I can do, not planning flooding any markets but I am curious about cheese making. I had been thinking of goat cheese but why not carabao? Happy you brought this up since its new to me.

    It is a thought that I looked into several years ago, as Carabao milk is very rich, MUCH richer than cow's milk. You can get fresh mozzarella at the Dep of Ag. Not terrific but usable.

    from my googling around on the subject I ran across a guy here on Cebu that has a small milk operation utilizing his own livestock which seems to include carabaos. He has a shop were he sells ice cream and items like that. It would seem carabao milk makes great ice cream

    I am positive it would. When I was young we had a half dozen holsteins. Every gallon of milk had an inch or two of cream on the top. Each day we would skim off this cream, and on Sundays we made ice cream and butter. Allow me to assure you that this was some wonderful stuff!

    Carabao milk has about double the cream content as a Holstein. This is what made me so interested in this.

    I milked cows as a boy and it does take a knack. If the cows like you, they give more milk. If the cows don't like you you need a new line of work. They also hold still better if you give them a better quality feed while you milk them. I think even carabao could be raised to be docile, raised from a calf and bottle fed so they won't have memories of mother kicking them halfway across the pasture, when she wasn't in the mood. It would be an interesting experiment.

    yea the carabao are docile, that first article I posted about the guy having all the trouble in the States I am beginning to think was a bunch of nonsense. The more I look around the more reasonable it seems. Its quite common in India and it seems that the PI government is importing buffalo for producing milk. You do need the correct kind of animal. I am curious about this, trying to start a micro dairy is intriguing to me. Being that I know nothing about cows I may need some assistance from some of you farm boys out there however...lol
