    Goat meat can be very good if properly processed, and therein lies a problem, few people here know how to properly process meat. Slashing it's throat and letting it scream to death does not qualify, it puts adrenaline in the system, which makes it tough and stringy. There are many other factors also. Proper aging, cleanliness, and temperature are very important.

    I was in Casa Blanca today and G told us that one of the dishes they served to the President and his party the other day was goat. He promises to have it as a special in the near future. Pat, it will be a good opportunity to try it.

    Kending (goat) calderetas is delicious, much better than dog calderetas.

    I tried the goat caldereta, and wasn't very impressed with it. The meat's texture was edible, but it had a "wang" to it that even all the little red hot peppers couldn't hide. They used to serve it at the old Santa Ana horse track. Then again, they also sold raw horse meat, from the lame horses they killed, which could be found at many of the street side bar-B-Q vendors nearby.



    If I'm gonna eat goat, I prefer papaitan kambing. It's goat innards stew. When cooked properly, the broth turns green, from the goat bile. It's bitter, yet leaves a sweetish aftertaste, that goes great with pale pilsen-:smile: Too bad it's so bad for the health.

    I'm guessing that you have not had the opportunity to eat much wild game? The "wang" comes from being improperly processed. It is called ADRENALIN, see my earlier post. If processed properly, goat meat is very good.

    All this talk of goat has reminded me of how good curried goat served in Singapore and Malaysia is. I might have to see if Cebu Pacific has a cheap ticket available

    My sister who lives in Devon in the UK used to breed goats, when i was staying there once we had goat for dinner!, it was a nice flavour , a bit like lamb but a little stronger .

    Also had goat milk on my corn flakes, not so good!, but some like it.

    My dad was one hell of a marksman. Since he grew up poor in the '40s, he became a d*mn good hunter. (may have also helped him survive an infantry tour in Korea)

    So... I got to eat squirrel, rabbit, duck, ect, when in season. But there was ALWAYS deer meat in the freezer. I didn't much care for gamey meat back then (doesn't mean I didn't eat my share) and still don't. I did learn, that adding lemon juice helps even the rankest deer burger go down:smile:
    When we're talking about gamy deer meat, it has more to do with what the deer has been eating, and how old it is, than how it's killed.


    Back to goat meat...


    I have a friend on the Big Island (Hawaii) that bow hunts goat. They're all around his place (Ocean view area). I've ate it cooked a couple of different ways, and it's always good when he cooks it. (Even his goat jerky is good)

    But...

    While I believe that properly killing the goat is important (slash the throat when the goat is calm, not terrified, or kill it with a well placed arrow when he least expects it) I think the main reason some goats taste better than others, is the type of goat your trying to eat.

    Captain Cook brought Spanish meat goats to Hawaii back in the 1700's. And they taste far superior than what I've tried here in the Philippines. I'm not saying there are no Spanish goats (bred specially for eating) in the Philippines, but from what I've seen along North Edsa (where you can always find live goats for sale) the goats aren't the same here. They look more like pygmie goats to me.
