plenty of wholesome good fresh local food here. If you wany "back home" food good luck. Times on Locsin street has many imported liquors, coffee, some other things.

Generally, I dont buy the beef, or any frozen meat. frreh veggies, fish, pork early in the AM at the market jus after they kill it. can't get any fresher.

I am raising 5 pigs on a farm in siaton, I m toying with the idea of actually making cured ham and bacon. Used to do it back in the home country. I want smoke it after curing , but have to find some suitable wood here.
    anyone interested?

Not heard of this one in Locsin st RHB ,might well worth visiting , we need good updates from you people there living in Dgte .

Having 5 pigs in a farm, interesting . My family had piggery before and my father used to cure ham only for family consumption though, but haven't got the idea if he put smoking in the process. But it was amusing as a child,to taste ham, perhaps my frst ham ,was impressed ,however it was filipino made ham ,i suppose. He has no background by trade on any ham production ,but he was a chemist by profession and had knowledge about the nitty gritty bits of chemical preservatives etc and he tried this idea of curing ham , it was experimantal to begin with and it went on.It tasted great so far my as my memory account was ,but i suppose we don't have any other external ham products to compare with it to distiguish and compare whether my father's ham is good or not ,but all are happy, and didn't drop dead, lol .

This is what I am quite interested to do perhaps when i retire still ages though ,hate to think the time, only dream for now,to do some bit of farming even just small scale manageable organic farm.Having pigs ,chickens for eggs ,goats ,herb garden, flower garden,or orchards...something to get the mind busy of ,i find this type of activities relaxing too ,i'm kind of green fingered, don't mind messing about with the soil.Oh well thanks for all the infos RHB ,good luck to your farm and this ham curing idea .If successful are you going to sell some to people?

We have an idea to make hams for our own use providing we can find potasium nitrate/ nitrite food grade, should not be a problem I think. Once we do it, maybe we will sell small quantities to friends and customers who might like cured pork. I have a recipie for virginia ham dry cure and wet pack brine cure also. The issue is temperaure control to generate the proper enzymes with out spoilage. We will use refrigeration to control this.
We are raising the pigs on a premium feed program the first time just to examine the costs per kilo, then I would like to try to raise organic pork. I know it is done here, but I have no knowledge yet how it is done in the philippines. I have done it in North America. Also do not know if there is amarket for this in dmgte. We will go slowly.

I think you misunderstand. Here you can hire someone for as little as 500P to do the dirty work, be nice! at least in public...

And since thanks to your posts, everyone knows what you and your family look like, and exactly where you live... and you want to be part of the community helping and being helped, it should be obvious that discretion is the better part of valor.

If you cause too much loss of face here it is a very big deal.

    not so gentle.

As this my 1st post, I welcome myself to this forum & hope all this aggression is simply a fart in the winds of time, & not indicative of the moral corruption that money can breed in certain people.

Fear nothing but fear itself. Interesting phrase. If you think about it, its like a chimp chasing its tail till it collapses in insanity.

Yup! It's surprising how this thread ended so abruptly and left a sour taste in my mouth being new and all. "The Website of Gentle People" wasn't so, in this case. Good luck to the administrators and members who work so hard to maintain peace in this forum.

    God bless!
