    Ingredients.....

Definintely a challenge getting the ingredients, and by improvising on some things, it can be very disappointing. Like what they serve here and call "enchiladas" and "burritos" are nowhere near close to what an enchilada or burrito is like!! I now have my tortilla press and masa harena to make the corn tortillas for enchiladas, (never have made my own, so hope that works out!!). Thanks to another forum member, she has brought me a lifetime supply of crushed red peppers. Had to ship my own chopped green chili's from the states, now to find some decent cheese for enchiladas and the cilantro I am told they have here...I am going to be ready to make my enchiladas!! Dear hubby hasn't them in over a year and is DYING for them!! Good luck and enjoy your stay!!

I am certain that if you can find a decent location, you will have plenty of customers for a Tex-Mex restaurant with real margaritas. I have yet to find anyplace in Dumaguete that can make a real margarita (and have found only a few in the whole country!) A bar where REAL, proper cocktails is much needed also!

    Bar/Tex-Mex restaurant

I know when I mentioned the possibility of opening a mexican restaurant on this forum many months ago, I was advised that when it has been tried in the past, it was met with failure because it is so expensive to get the ingredients and people here would not pay what had to be charged to cover the costs, etc.....would be interesting to see if someone tried again, how successful it might could be, I for one, wouldn't mind paying for authentic mexican or tex/mex food!! And, I would love a real margarita or a fuzzy navel (please, do not post pics of your hairy belly buttons!!).

Hmm...I have only been here for two years, but the only Mexican or as they say, "Mexican-Inspired" restaurant that I have known of is Mooon Cafe. Never heard of any other Mexican or Tex-Mex places. Although Waterfront Cafe and Coco Amigos feature a few Mexican selections.

I have heard people say that it would be too expensive, etc to import key ingredients to make proper Mexican food, but I question that thinking. And unless their were failed Mexican restaurants before I arrived, I don't think anyone has tried and failed here.

I am reminded of people who said that about Thai food also..."can't make it work because you have to import key ingredients"...well, the Krua Thai family of restaurants in Cebu has grown to something like 14 restaurants in less than a decade (and is franchising around the country now) proved those people wrong. (They also proved wrong those who said that an unfamiliar food like Thai food wouldn't go over with Filipino customers.)

So, I say, give it a shot!
